Whats the best e-commerce software that allows fully customizable features?

Is there any e-commerce system/software that both manages orders and integrates project management?

I am looking for a system that will both take orders from our website, and allow us to manage each order as its own project in some project management software. Each order requires several people to collaborate to create the product, so when each order is placed we would like a new project to be made on the back-end where we can manage that order as its own project.

Maybe there is an open source project management tool that would work?
